You know it’s fall when you pull out the pumpkin pie spice.  I stumbled upon a recipe for Pumpkin Quinoa Muffins on Savvy Mom and gave them a try.  Wow! These are the most moist muffins (try saying that 3 times fast) I have ever come across.  I will definitely be making these again and again.

Pumpkin Quinoa Muffins

  • 3/4 C whole wheat flour
  • 1/2 C all-purpose flour
  • 1 t baking soda
  • 1/2 t baking powder
  • 1 t cinnamon
  • 1 t pumpkin pie spice
  • 1/2 C brown sugar
  • 1/4 C honey
  • 1 egg
  • 1/4 C plain yogurt
  • 1/4 C olive oil
  • 1 t vanilla
  • 3/4 C pumpkin puree
  • 1/2 C cooked quinoa
  1. Preheat the oven to 350 F
  2. Combine flours, baking soda, baking powder, and spices
  3. In a large mixxing bowl mix together the brown sugar, honey, egg, yogurt, oil, and vanilla.
  4. Stir in the pumpkin, dry ingredients, and the qunoa; mix just until combined
  5. Spoon batter into greased muffin tin, filling the cups 2/3 full
  6. Bake for 18 mins.
